Having moved from Wales to West Sussex I have re-registered as a food business . This is important for anyone who is a primary producer of honey for sale, and irrespective of the number of hives or jars of “Food” that you intend to sell. As it happens this year 2023, I harvested 4 jars of honey and intend to sell none. See my other post on the 2023 harvest!!
Anyways the process was pretty simple I registered with the FSA and a few weeks later an inspector came to see my paperwork. it is all about having a process and showing how you stick to the process. This time round the inspector knew a lot about bees and really understood what local honey production is all about.
The paperwork from Wales was all in place, updated for the new kitchen with my Hazard Analysis and Critical Control Points so I passed with 5 stars following an inspection of paperwork and the working practices.
Paperwork was a nice 22 page document covering the following sections.
- My set-up
- Honey preparation
- Honey processing
- Hazard assessments
- Control points
- Critical limits
- Monitoring
- Corrective actions
- verification
- Authorisation
